Overview

Pista Express, nestled conveniently inside the Baymont Hotel at 3312 Fortress Dr in Midland, TX, is a remarkable gem for lovers of Indian cuisine. Its location within a hotel lobby might give first-timers pause, but the inviting atmosphere and vibrant aromas quickly dispel any hesitation. The restaurant’s clean and well-kept space offers a straightforward, no-frills dining experience that focuses entirely on authenticity and flavor.

The menu is a carefully curated showcase of Indian classics and specialties, thoughtfully prepared and presented. Standout items like the Mango Lassi capture the perfect balance of sweet and tangy, offering a refreshing counterpoint to the robust spices elsewhere on the menu. The Samosas, with their crisp, golden exterior and savory fillings, offer a delightful start, especially when paired with the tangy and rich chutneys.

Main dishes such as Chicken Korma with Garlic Naan and Lamb Vindaloo highlight the kitchen’s mastery of seasoning and texture. The Chicken Korma boasts a creamy, aromatic sauce that coats tender pieces of chicken without overwhelming the palate. The Lamb Vindaloo impresses with deep, layered spices and perfectly cooked meat that melts in your mouth. The Garlic Naan, freshly baked in a tandoor, arrives warm and fragrant, appealing strongly to garlic lovers and serving as the ideal companion to the curries.

For those seeking vegetarian options, Pista Express elevates dishes like Palak Paneer and Honey Chilli Cauliflower, balancing vibrant flavors and textures with refined finesse. The Indo-Chinese-inspired items like Chilli Paneer and Paneer Manchurian bring fusion elements that excite the palate without straying far from traditional roots.

The restaurant shines not only in its culinary offerings but also in the quality of its service, as echoed by many patrons. While most find the staff attentive and welcoming, especially the hotel team’s willingness to accommodate late-night orders, there are occasional lapses in service speed and communication, which can detract slightly from the overall experience. However, the generous portions and consistency of flavors more than compensate for any such moments.

Pista Express caters well to travelers, locals, and anyone seeking a reliable stop for richly spiced, authentic Indian dishes along the Midland stretch of I-20. It’s a practical and satisfying choice for a quick lunch, leisurely dinner, or even a comforting solo meal after a long day of travel. Whether you’re craving classics like biryani or exploring lesser-known specialties such as Chicken-555, this spot offers both familiarity and a taste of adventure in Indian cuisine.

In summary, Pista Express stands out as an accessible and genuine Indian dining experience wrapped inside a hotel’s welcoming walls. Its combination of flavorful dishes, a straightforward ambiance, and customer-driven service make it a strong recommendation for anyone passing through Midland or looking for a dependable Indian meal. Don’t hesitate to raise the heat on your spice level—the kitchen confidently delivers an authentic kick that many find irresistible.

The food was so good. Don't even think of ordering mild spice, you will be corrected (in the best way). Don't be confused because it is in a hotel lobby.

Pista Express is hands down one of the best Indian restaurants on the entire I-20 stretch! Every time I’m driving cross-country, this is one of my go-to stops. The food is always delicious, fresh, and satisfying. My favorites are the biryani, garlic naan, goat and chicken curry—perfectly seasoned, flavorful, and generous in portions. What really makes this place stand out is not just the food, but the amazing customer service. On one occasion, I checked into my hotel very late, close to 11 p.m., and even though the restaurant closes around 9–9:30 p.m., the hotel manager, Mr. Godly, went above and beyond by holding my delivery at the door and personally handing it over to me. That kind of extra effort for customers really shows the heart behind this place. The restaurant itself is clean, well-kept, and conveniently located inside a hotel, making it an easy and safe stop during long drives. Every visit reminds me why this is one of my favorite Indian spots in America. I only wish I had the chance to try more of their menu because everything I’ve had so far has been outstanding. If you’re ever driving through Midland or along I-20, do yourself a favor and stop at Pista Express. Whether it’s a quick meal or a hearty dinner, you will not be disappointed—this place consistently delivers both quality food and exceptional service.

Wonderful hidden gem. Service is knowledgeable about the cuisine and everything we had was delicious. Mango lassi was sweet and thick similar to a milkshake. Chikko shake has a sweet nuttiness and more grit to it but also very good. Samosas are well seasoned, crispy and the sauces complement nicely. The chicken korma was creamy, full of flavor and perfectly cooked as was the rice. The butter chicken my partner got Indian level spice so I did not try his, but he said it was delicious, had a good spice level but they could probably go hotter and cleaned his plate. Garlic naan is strongly seasoned for you garlic lovers, I recommend it. Great experience. Wish they had a cheese or even jalapeño cheese naan. Will have to come back to try the saag and Indo-Chinese menu items.

Delicious food...mediocre service My wife and I went to Pista Express for lunch. We had a bit of a hard time finding it until we realized it was actually inside a hotel. Once we got inside the hotel, we just picked a door and went in as there were no signs. We were seated in an area that looks like it also doubles as the hotel breakfast area and ordered our food. The VEGETABLE SAMOSAS tasted fantastic. Unfortunately, the mint chutney lacked a bit of flavor but was still good. The tamarind chutney was good although I'm not a huge fan, but overall I was very pleased with our appetizer. My wife ordered one of the CHICKEN BIRYANI dishes which tasted excellent and had a very good spice level. The spice was a bit too much for her while I thought it was perfect. She definitely enjoyed it. I ordered the LAMB VINDALOO which was super flavorful and one of the better ones I've had in recent years. Spiced perfectly and the lamb was tender. The GARLIC NAAN was also excellent and full of flavor CONS: The service wasn't very good and the staff needs to pay better attention. My vindaloo was brought out first without rice. I asked if it came with it and the server said yes. A few minutes later, they brought out the biryani and I asked about my rice again. I was told it was being prepared. Nearly 10 minutes go by and I see the server walking around looking at his phone. Finally I go up to the front, ring the bell, and asked where my rice was. He seemed surprised and a bit embarrassed that he forgot and brought it out immediately but by this time, my food was already getting cold. Overall, it was really good with sizable portions and I would recommend coming here, but the lack of service would definitely steer people away from ever coming back

This place is a hidden gem. Who would’ve thought in Midland Texas you would find an Indian restaurant very comparable to that in a big city. I’ve lived in NYC for 13 years and I put this restaurant against some of those found in Little India. My favorites here are the garlic naan, butter chicken & lamb biryani. So delicious!!
